When I first found out that I had Celiac's Disease, I was relieved. After all the testing, lack of answers, and feeling just absolutely lousy and there was a light coming up at the end of the tunnel. But after the relief came shock. I would never be able to just go grab a pizza or eat birthday cake again. Turns out, even though having to live the Gluten Free diet can be daunting at times, it's not all that bad. Good for me I like rabbit food!
Starting from scratch is always the hardest. Knowing what you can and can't eat, and even getting to that point, can take what seems to be forever. Pretty much your diet consists of rice, rice, and more rice. Throw in a plain Jane salad and maybe some fruits when you're up for it and you can get through the first month alright. But what happens when you start craving all those foods you can't eat anymore? And I'm not talking cookies and pancakes, there are recipes out there for those now, I'm talking about for reals cake and sandwiches. Pasta cravings are the worst seconded only by the desire for soft, fresh bread.
Don't get discouraged though! This is not an attempt to make you feel any worse about your diet than I'm sure you tend to feel. In fact, this is just the opposite. Chances are, you have Celiac's, else you most likely wouldn't have wandered into this blog. While there are already some resources out there for living gluten free, they tend to be pretty limited. One of my favorite blogs, written by Karina Allrich (aka the Gluten Free Goddess), has so many wonderful resources and tried and true recipes. If you haven't read it, then I suggest you check it out sometime in the very near future, or you'll be missing out on some fabulous information!
I can't promise you that this will be anything to brag about, but I will say that I will do my hardest to share my personal experiences with you so that maybe your newfound gluten free lifestyle might be just a little easier. As they say, knowledge is power. I'll share mine so you can use yours!
